Gabriel-Pagin: Millésime 2006

Made of 100% Chardonnay from Avize, Cramant and Avenay val d’Or. Dosage of 4.5 grams. Golden color with a refined effervescence and nice tears on the glass. Very intense nose of roasted lemon, apple-cinnamon, speculaas spices, heather honey, veal and game stock, verbena tea, jasmine, hibiscus. After a long time in the glass it expressed minerality. Concentrated and vinous mouthfeel. On the palate you get dried apricots, plums, Grand Marnier, dates, baked apple, crême brulée and surprising fresh lemon accents. On the mid palate you get savoury notes of tempura. The finish is long and toasty and has pippali pepper, juniper berry, nutmeg and lingering pastry crust. Lovely integration of acidity. Perfect to pair with traut. Looking forward to taste more from Gabriel-Pagin.
