Moutardier: Millésime 2008

Made of 80% Pinot Meunier and 20% Chardonnay. 7.5 grams of dosage. Straw color with a refined effervescence and a nice mousse. On the nose you get at first emmentaler cheese with cumin and lemon curd followed by tangerine, pear, quince cheese, marshmellow, christmass cake with cinnamon and a hint of new leather. Soft rounded mouthfeel with a creamy mousse. On the palate you get apple pie, dried apricot, sugared almonds, apple-pear syrup, candied peaches and marmelade with ripe pomelo, Doyenné pear and overripe (bruised) apple on the mid palate.  The finish is medium long with apple and candied stone fruit acidity. I do miss a bit of energy and expressive minerality. I’m surprised that there is already so much evolution for a 2008, therefor it’s best not to wait long before opening a bottle.
