Antoine Bouvet: Saignée de Mareuil (2013)

Made of 100% Pinot Noir from parcels Foussard and Beguine in Mareuil sur Aÿ. Deep salmon orange with a very fine effervescence. Exciting on the nose with black berry, bramble, clafoutis, smoky Burgundy wood and hints of a young Pommard, sellery and old parmesan cheese with a faint overtone of rubber. The texture is vinous and serious. On the palate you get red cherry and candy, bramble, raspberry. Nicely “controlled” acidity, nothing exuberant there. The finish is long with tobacco, redcurrants, dried raspberries and austere woody spices. Definitely needs nice accompanying food. I’m looking forward to taste more of Bouvet’s wines, but production is very small (less than 500 bottles)
