Antoine Bouvet: Blanc de Blancs

Made from Chardonnay only from 2 different parcels: Couture in Avenay-Val-d’Or and Rocheforts in Bisseuil. Dosage is 3 grams. Lovely yellow golden color with a fine effervescence and soft mousse. The wine seemed rather shy at first so we decided to decant the wine. The nose revealed apricot tartlets, crème patissière, pineapple, dried fruits, carob, gingerbread and hints of violet candy, lavender and sellery. The mouthfeel is soft and smooth. On the palate you get light pineapple, papaya, royal jelly and a dash of chocolate fondant. The finish is quite long and smooth with a mild acidity of citrus, pineapple and lovely nutty flavors. A very elegant wine perfect to drink as an aperitif.

Antoine Bouvet is another upcoming winemaker to keep an eye on. I was lucky to obtain a bottle of his Blanc de Blancs because production is limited to 500 bottles only.
