Made of 100% Pinot Noir. Dosage 3 g/l. Deep golden color with a refined effervescence and nice tears on the glass. The nose is very interwoven and it is hard to analyse the olfactive components. Giving this wine more time and a lot of air helped a lot. On the nose you get extinguished fireplace, champignon mushroom, roasted parsnip, orangettes, Mirabelle plum, blueberry, roses, mimosa, slate and overtones of musk, tobacco, exotic wood and sellery. The mouthfeel is soft but has concentration and structure. On the palate you get an evolution of freshly picked fruit with plums, yellow cherry going to dried cherry, milk chocolate and silex. Lovely long finish with a stringent acidity and warm cigar spices. This would pair well with wild duck with sauce of yellow cherry, a crème of parsnip with vanilla and a crisp of coffee with mild spices.
