Moutard: cépage Chardonnay “Champ Persin”

Made of 100% Chardonnay. Dosage 8g/l. Light golden color with a refined effervescence and soft mousse. On the nose you get kumquat, bloodorange, orange blossom, deep chalky minerality, a volcanic smokiness and bitter almonds.  This needed some time to settle down. After a while it showed dried fruits with apricots, candied lemon and a lovely floral complexity. On the palate you get orange, candied lemon with salt, Serrano ham fat and a hint of gingerbread. There’s a firm bitterness of yellow grapefruit on the mid-palate. The acidity is a bit mellow and misses dynamics but the finish is quite long and reverberates mild spices and a refreshing minerality.
